珠芽魔芋营养成分的分析和测定

摘要:
魔芋不仅富含优质的可溶性膳食纤维, 而且低热量、 低脂肪, 是大众认可的健康食物。 而珠芽 魔芋 Amorphophallus bulbifer 抗逆性更强, 适应性广, 目前已在国内广泛推广种植。 为明确珠芽魔芋的营 养成分及其含量, 以不同生长年限的珠芽魔芋为供试材料, 采用凯氏定氮法、 茚三酮柱后衍生离子交换色 谱法、 苯酚-硫酸分光光度法和微波消解—电感耦合等离子质谱法 (ICP—MS) 等多种分析技术, 对不同 生长年限的珠芽魔芋中蛋白质、 氨基酸、 粗多糖和微量元素等营养成分进行测定。 结果表明, 珠芽魔芋中 蛋白质和氨基酸含量随栽培年份的增加而减少, 而粗多糖的含量先升高后降低。 16 种氨基酸中天冬氨酸 (ASP) 含量最高, 蛋氨酸 (MET) 含量最低。 微量元素在不同生长年限的珠芽魔芋中未表现出明显的规 律性, 在 28 种微量元素中 K 含量最高, 在珠芽、 一年生和二年生地下球茎中的含量别为 5 150、 7 170 和 3 810 mg / kg。 珠芽魔芋中检测出的重金属元素含量均低于食品安全国家标准 (GB 2762—2022) 规定的 限量。

Analysis and Determination of Nutrient Components in Amorphophallus bulbifer

Abstract:
Konjac is not only rich in high-quality soluble dietary fiber but also low in calories and fat, which is a healthy food recognized by the public. Amorphophallus bulbifer has stronger stress resistance and wide adaptability and has been widely promoted and planted in China. In order to determine the nutrient composition and content of A. bulbifer with different growth years, a variety of analytical techniques including Kjeldahl nitrogen determination, ninhydrin post-column derivatization ion exchange chromatography, phenol-sulfuric acid spectrophotometry and microwave digestion and inductively coupled plasma mass spectrometry (ICP-MS) were used in this study. The contents of protein, amino acid, crude polysaccharide and trace elements in different growing years of A. bulbifer were determined. The results showed that the contents of protein and amino acid decreased with the increase of cultivation years, while the contents of crude polysaccharide increased first and then decreased. Among the 16 amino acids, the content of aspartic acid (ASP) was the highest, and the content of methionine (MET) was the lowest. The content of K was the highest among the 28 trace elements, and the contents of K were 5 150, 7 170, and 3 810 mg / kg respectively in the bud, annual, and biennial subterranean bulbs. The content of heavy metal elements detected in A. bulbifer was all lower than the limit set by the National Food Safety Standard (GB 2762-2022)
